  • 1 cup rolled oats
  • 1 cup almond milk or any plant-based milk
  • 2 ripe bananas, mashed the riper, the sweeter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
Fruits and Nuts
  • 2 cups mixed berries strawberries, blueberries, raspberries, and blackberries
  • 1/4 cup chopped nuts almonds or walnuts, optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish (9x9 inches) or line it with parchment paper.
  3. In a large bowl, combine the mashed bananas, almond milk, maple syrup (or honey), and vanilla extract. Stir well.
  4. In another bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until fully combined.
  6. Gently fold in the mixed berries and optional chopped nuts.
  7. Pour the mixture into the prepared baking dish, smoothing it out evenly.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden and firm.
  9. Allow it to cool for a few minutes before slicing. Serve warm or cool completely and store for later.

Notes

For best results, choose fresh, organic berries. This recipe is naturally egg-free and can be prepared the night before baking. Can be served with yogurt, nut butter, or fresh fruit.
