- Preheat your oven to 350°F (175°C).
- Grease a baking dish (9x9 inches) or line it with parchment paper.
- In a large bowl, combine the mashed bananas, almond milk, maple syrup (or honey), and vanilla extract. Stir well.
- In another bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until fully combined.
- Gently fold in the mixed berries and optional chopped nuts.
- Pour the mixture into the prepared baking dish, smoothing it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and firm.
- Allow it to cool for a few minutes before slicing. Serve warm or cool completely and store for later.
Notes
For best results, choose fresh, organic berries. This recipe is naturally egg-free and can be prepared the night before baking. Can be served with yogurt, nut butter, or fresh fruit.
