Wet ingredients

  • 1 cup brown sugar, packed
  • 0.5 cup granulated sugar
  • 2 large egg yolks Use fresh, room temperature eggs.
  • 1 teaspoon vanilla extract
  • 1 tablespoon cream soda extract Adjust if using actual cream soda.
Mix-ins
  • 1 cup butterscotch chips

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In another large bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy.
  4. Add in the egg yolks, vanilla extract, and cream soda extract, and combine well.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the butterscotch chips evenly.
Baking
  1. Using a cookie scoop, portion out the dough onto the prepared baking sheet, leaving space between each.
  2. Bake for 10-12 minutes, until the edges are golden but the centers are soft.
  3. Allow cookies to cool for a few minutes on the sheet before transferring to a wire rack.
