Preparation
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly moist. Press the mixture into the bottom of a greased 9×13 inch baking dish to form a solid crust.
- In another bowl, beat the softened cream cheese and sugar together until smooth. Gradually add the sour cream, eggs, vanilla extract, and ground cinnamon, mixing until well combined.
- Carefully fold in the diced apples, making sure they’re evenly distributed throughout the mixture.
- Pour the cheesecake filling over the prepared crust, spreading it out evenly with a spatula.
Baking
- Bake the bars in the preheated oven for about 30-35 minutes, or until the center is set and a bit jiggly.
- Once done, remove the bars from the oven and let them cool completely in the baking dish.
Finishing Touches
- Drizzle the caramel sauce over the top of the cooled cheesecake bars. If desired, sprinkle more diced apples on top for added visual appeal.
- Cover the dish and place the bars in the refrigerator for at least 2 hours. Once chilled, cut into squares and enjoy!

Use room temperature ingredients for the best texture. Allow the bars to chill properly for enhanced flavors.
