A comforting one-pot dish combining tender chicken, fresh spinach, juicy tomatoes, and hearty orzo pasta.

- 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
- 1 cup orzo pasta
- 2 cups fresh spinach (washed and roughly chopped)
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 4 cups chicken broth (low-sodium)
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, about 3-5 minutes. Then, add minced garlic and cook for an additional minute until fragrant.
- Stir in chicken pieces. Season with salt, pepper, and oregano. Cook for 5-7 minutes until browned and cooked through.
- Pour in chicken broth and canned diced tomatoes. Bring mixture to a boil.
- Once boiling, stir in orzo pasta, reduce heat to a simmer, and cover. Cook for 10-12 minutes until orzo is tender and liquid is mostly absorbed.
- Remove from heat and stir in chopped spinach until wilted. Adjust seasonings if necessary.
- Serve warm, garnished with fresh basil.
