Description

A comforting one-pot dish combining tender chicken, fresh spinach, juicy tomatoes, and hearty orzo pasta.


Ingredients

  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • 1 cup orzo pasta
  • 2 cups fresh spinach (washed and roughly chopped)
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth (low-sodium)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, about 3-5 minutes. Then, add minced garlic and cook for an additional minute until fragrant.
  2. Stir in chicken pieces. Season with salt, pepper, and oregano. Cook for 5-7 minutes until browned and cooked through.
  3. Pour in chicken broth and canned diced tomatoes. Bring mixture to a boil.
  4. Once boiling, stir in orzo pasta, reduce heat to a simmer, and cover. Cook for 10-12 minutes until orzo is tender and liquid is mostly absorbed.
  5. Remove from heat and stir in chopped spinach until wilted. Adjust seasonings if necessary.
  6. Serve warm, garnished with fresh basil.
