- 4 cups low-sodium vegetable broth
- 2 tsp fresh rosemary, chopped

Instructions
- Prep your ingredients: Chop all fresh vegetables and herbs.
- Heat the olive oil in a large pot over medium heat.
- Sauté the onions, carrots, and celery until softened, about 5–7 minutes.
- Add minced garlic and sauté for an additional minute.
- Pour in the diced tomatoes and vegetable broth, bringing it to a gentle boil.
- Stir in the garbanzo beans, spinach, rosemary, and thyme, then let it simmer for 20 minutes.
- Taste and adjust seasoning with salt and pepper.
- Serve hot in bowls.
