Ingredients

  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Chop all fresh vegetables and herbs.
  2. Heat the olive oil in a large pot over medium heat.
  3. Sauté the onions, carrots, and celery until softened, about 5–7 minutes.
  4. Add minced garlic and sauté for an additional minute.
  5. Pour in the diced tomatoes and vegetable broth, bringing it to a gentle boil.
  6. Stir in the garbanzo beans, spinach, rosemary, and thyme, then let it simmer for 20 minutes.
  7. Taste and adjust seasoning with salt and pepper.
  8. Serve hot in bowls.
