Description

A vibrant dish that combines grilled chicken, sweet corn, and zesty lime over a bed of rice, bringing together essential summer flavors.

Ingredients

Scale
  • 34 boneless skinless chicken breasts
  • 2 ears of fresh sweet corn (or 1 cup frozen)
  • 2 cups cooked white or brown rice
  • Juice of 1 lime
  • ½ cup crema or sour cream
  • Fresh cilantro, chopped

Instructions

  1. Cook rice according to package instructions.
  2. Preheat the grill or stovetop grill pan over medium-high heat.
  3. Season chicken with salt, pepper, and lime juice; grill for 6-7 minutes per side until cooked through (165°F internal temperature).
  4. Grill fresh corn alongside chicken or sauté frozen corn until warm.
  5. Slice grilled chicken and assemble bowls: layer rice, sliced chicken, and corn.
  6. Drizzle with crema or sour cream; top with chopped cilantro and extra lime juice.
  7. Serve immediately.

Notes

For a healthier option, you can use Greek yogurt instead of crema, or brown rice for added fiber.
