Description

Delightful muffins filled with fresh strawberries and a rich cream cheese center, perfect for brunch or a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 cup whole milk
  • 2 large eggs
  • 1 cup fresh strawberries (chopped)
  • 1 package (8 oz) cream cheese (softened)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt until combined.
  3. In another bowl, beat together milk and eggs until smooth, then add to dry ingredients and fold gently.
  4. Fold in the chopped strawberries.
  5. In a separate bowl, mix softened cream cheese with sugar until smooth.
  6. Spoon half the batter into each muffin liner, add cream cheese filling, and top with remaining batter.
  7. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.

Notes

For a healthier option, substitute sugar with a sweetener and use whole wheat flour.
