- 2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 cup granulated sugar
- 1/2 tsp salt
- 1 cup whole milk
- 2 large eggs
- 1 cup fresh strawberries (chopped)
- 1 package (8 oz) cream cheese (softened)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, sugar, and salt until combined.
- In another bowl, beat together milk and eggs until smooth, then add to dry ingredients and fold gently.
- Fold in the chopped strawberries.
- In a separate bowl, mix softened cream cheese with sugar until smooth.
- Spoon half the batter into each muffin liner, add cream cheese filling, and top with remaining batter.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
Notes
For a healthier option, substitute sugar with a sweetener and use whole wheat flour.
