Description

A comforting and hearty Sausage Potato Soup that combines savory Italian sausage, creamy Yukon Gold potatoes, and aromatic herbs, perfect for chilly evenings.


Ingredients

  • 1 lb Italian sausage
  • 4 medium Yukon Gold potatoes (about 2 lbs), diced
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add the Italian sausage, cooking until crispy and golden, about 5 minutes. Remove from the pot and set aside.
  2. In the same pot, add the chopped onions and minced garlic, stirring until softened, around 3-4 minutes.
  3. Toss in the diced Yukon Gold potatoes and chicken broth, bringing the mixture to a boil. Reduce the heat and let simmer for 15 minutes, or until the potatoes are fork-tender.
  4. Return the precooked sausage to the pot. Pour in the heavy cream, sprinkle in the paprika, thyme, salt, and pepper. Gently heat through for about 5 minutes.
  5. Ladle the warm soup into bowls and serve with fresh herbs or shredded cheese if desired.

Notes

For a lighter version, consider using turkey sausage and substituting heavy cream with coconut milk.
