- 1 lb Italian sausage
- 4 medium Yukon Gold potatoes (about 2 lbs), diced
- 1 medium sweet onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add the Italian sausage, cooking until crispy and golden, about 5 minutes. Remove from the pot and set aside.
- In the same pot, add the chopped onions and minced garlic, stirring until softened, around 3-4 minutes.
- Toss in the diced Yukon Gold potatoes and chicken broth, bringing the mixture to a boil. Reduce the heat and let simmer for 15 minutes, or until the potatoes are fork-tender.
- Return the precooked sausage to the pot. Pour in the heavy cream, sprinkle in the paprika, thyme, salt, and pepper. Gently heat through for about 5 minutes.
- Ladle the warm soup into bowls and serve with fresh herbs or shredded cheese if desired.
Notes
For a lighter version, consider using turkey sausage and substituting heavy cream with coconut milk.
