- 4 medium Yukon Gold potatoes (about 2 lbs), diced
- 1 medium sweet onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add the Italian sausage. Cook until browned and crispy, about 5 minutes. Remove the sausage and set aside.
- Toss in the chopped onions and minced garlic to the same pot. Sauté for 3-4 minutes until softened.
- Add diced Yukon Gold potatoes and low-sodium chicken broth. Bring to a boil, then reduce heat and let it simmer for about 15 minutes, until potatoes are fork-tender.
- Return the sausage to the pot along with heavy cream, paprika, dried thyme, salt, and pepper. Heat through for an additional 5 minutes.
- Serve hot, garnished with fresh herbs or a sprinkle of cheese if desired.
