Description

A comforting Sausage Potato Soup that blends savory Italian sausage with creamy Yukon Gold potatoes for a heartwarming dish that’s perfect for family gatherings.


Ingredients

  • 1 lb Italian sausage
  • 4 medium Yukon Gold potatoes (about 2 lbs), diced
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add the Italian sausage. Cook until browned and crispy, about 5 minutes. Remove the sausage and set aside.
  2. Toss in the chopped onions and minced garlic to the same pot. Sauté for 3-4 minutes until softened.
  3. Add diced Yukon Gold potatoes and low-sodium chicken broth. Bring to a boil, then reduce heat and let it simmer for about 15 minutes, until potatoes are fork-tender.
  4. Return the sausage to the pot along with heavy cream, paprika, dried thyme, salt, and pepper. Heat through for an additional 5 minutes.
  5. Serve hot, garnished with fresh herbs or a sprinkle of cheese if desired.

For a lighter version, consider using turkey sausage or coconut milk as a substitute for heavy cream.
