Description

A warm and soothing Italian-inspired soup featuring tiny pasta, perfect for cozy evenings or when feeling under the weather.


Ingredients

  • 1 cup pastina pasta
  • 4 cups vegetable broth or water
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 medium carrots, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, diced carrots, and celery. Cook for about 5-7 minutes until the vegetables are softened and fragrant.
  2. Pour in the vegetable broth (or water) and stir to combine. Bring the mixture to a gentle boil.
  3. Once boiling, add the pastina pasta. Cook according to the package directions, usually around 5-7 minutes, until the pasta is tender.
  4. Stir in the dried thyme, salt, and pepper to taste, adjusting seasoning as needed.
  5. Ladle the soup into bowls. For a finishing touch, sprinkle with fresh parsley and grated Parmesan cheese if desired.

Notes

Add cooked chicken or chickpeas for protein. Customize with your favorite vegetables.
