Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, diced carrots, and celery. Cook for about 5-7 minutes until the vegetables are softened and fragrant.
- Pour in the vegetable broth (or water) and stir to combine. Bring the mixture to a gentle boil.
- Once boiling, add the pastina pasta. Cook according to the package directions, usually around 5-7 minutes, until the pasta is tender.
- Stir in the dried thyme, salt, and pepper to taste, adjusting seasoning as needed.
- Ladle the soup into bowls. For a finishing touch, sprinkle with fresh parsley and grated Parmesan cheese if desired.
Notes
