- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 5–6 crushed Oreo cookies
- Crushed Oreo cookies (for garnish)
- Whipped cream (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease your muffin tin.
- In a medium bowl, whisk together flour, baking soda, and salt. In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla, then gradually add the flour mixture until combined.
- Press spoonfuls of dough into the bottom and sides of the muffin cups to create cups.
- In another bowl, beat cream cheese until smooth. Add granulated sugar and vanilla, then incorporate the egg and beat until smooth. Gently fold in crushed Oreos.
- Spoon the cheesecake filling into cookie cups, filling about 3/4 full.
- Bake for 18-20 minutes, or until the filling is set.
- Cool at room temperature, then pop out the cookie cups and garnish with crushed Oreos or whipped cream.
- Serve chilled or at room temperature.
Notes
Allow cream cheese and eggs to reach room temperature for a smoother filling. Chill before serving for the best flavor.
