Description

A vibrant salad combining hearty chickpeas, fresh vegetables, and zesty dressing for a refreshing meal.


Ingredients

  • 2 cans chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until emulsified.
