- 3–4 boneless, skinless chicken breasts
- 8 oz fettuccine or penne pasta
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 2 tbsp low-sodium soy sauce
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper and place them in the prepared baking dish.
- Whisk together the heavy cream, soy sauce, minced garlic, and Parmesan cheese in a bowl until smooth. Pour over the chicken.
- Bake for 25-30 minutes until the chicken reaches 165°F (75°C).
- Cook pasta according to package instructions until al dente; drain and set aside.
- Combine the cooked pasta with the baked chicken and sauce in a bowl before serving.
Notes
For a lighter dish, consider using coconut cream instead of heavy cream or substituting chicken with tofu or chickpeas.
