Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz fettuccine or penne pasta
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 2 tbsp low-sodium soy sauce
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts liberally with salt and pepper, ensuring all sides are coated. Place the chicken in the prepared baking dish.
  3. In a medium bowl, whisk together the heavy cream, soy sauce, minced garlic, and grated Parmesan cheese until smooth.
  4. Pour the creamy mixture over the chicken breasts, ensuring every piece is coated.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  6. While the chicken bakes, bring a large pot of salted water to a boil and cook your pasta according to package instructions until al dente. Drain and set aside.
  7. When the chicken is ready, remove it from the oven and let it rest briefly. Combine the cooked pasta with the baked chicken and creamy sauce, mixing until evenly coated.

Notes

For a lighter version, substitute heavy cream with a low-fat alternative or whole grain pasta for added fiber.
