A warm and comforting Hearty Italian Sausage Tortellini Soup made with savory sausage, tender tortellini, and a medley of vegetables, perfect for cozy fall nights.

- 1 pound halal Italian sausage (mild or spicy)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken or vegetable broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- 1 bag (9 ounces) cheese tortellini
- 2 cups fresh spinach
- Salt and pepper to taste
- Olive oil for cooking
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the sausage and brown for 5-7 minutes, breaking it up with a wooden spoon.
- Transfer the sausage to a plate and set aside. In the same pot, add more olive oil if necessary and sauté the onion, carrots, and celery for 5-6 minutes.
- Add the minced garlic and Italian seasoning, cooking for about 1 minute until fragrant.
- Pour in the broth and add the diced tomatoes. Bring to a simmer and return the sausage to the pot.
- Stir in the tortellini and cook according to package instructions, usually around 4-5 minutes.
- Just before serving, add the spinach and let it wilt for about 1 minute. Season with salt and pepper to taste.
- Ladle into bowls and garnish with fresh basil or parsley if desired.
Notes
To enhance the flavor, use high-quality halal sausage and consider using homemade broth. Store leftovers in an airtight container for up to 3 days.
