Description

Delicious and easy-to-make gluten-free apple cheesecake bars combining creamy cheesecake with sweet apples, perfect for any occasion.


Ingredients

  • 1 cup gluten-free graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups peeled and diced apples (preferably Granny Smith)
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1 cup rolled oats (gluten-free)
  • 1/2 cup brown sugar
  • 1/3 cup unsalted butter, melted
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Make the crust by combining gluten-free graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the prepared pan and bake for 10 minutes. Cool.
  3. Prepare the cheesecake filling by beating cream cheese until smooth. Mix in granulated sugar and vanilla extract, then add eggs one at a time.
  4. Fold in diced apples, cinnamon, and nutmeg.
  5. Pour the cheesecake filling over the cooled crust and spread evenly.
  6. Make the topping by combining rolled oats, brown sugar, melted butter, and cinnamon.
  7. Sprinkle the oat mixture over the cheesecake layer.
  8. Bake for 35-40 minutes until slightly jiggly in the center.
  9. Cool in the pan, then refrigerate for at least 2 hours before slicing.

Notes

Serve with vanilla ice cream, whipped cream, or caramel sauce for extra flavor.
