- 1 cup gluten-free graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 2/3 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups peeled and diced apples (preferably Granny Smith)
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg (optional)
- 1 cup rolled oats (gluten-free)
- 1/2 cup brown sugar
- 1/3 cup unsalted butter, melted
- 1/2 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Make the crust by combining gluten-free graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the prepared pan and bake for 10 minutes. Cool.
- Prepare the cheesecake filling by beating cream cheese until smooth. Mix in granulated sugar and vanilla extract, then add eggs one at a time.
- Fold in diced apples, cinnamon, and nutmeg.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Make the topping by combining rolled oats, brown sugar, melted butter, and cinnamon.
- Sprinkle the oat mixture over the cheesecake layer.
- Bake for 35-40 minutes until slightly jiggly in the center.
- Cool in the pan, then refrigerate for at least 2 hours before slicing.
Notes
