Description

A fun and easy snack perfect for kids, these Mini Crunchwraps are customizable and delicious, making them ideal for the first day of school.


Ingredients

  • Small whole wheat tortillas
  • Cooked ground beef or turkey
  • Shredded cheese (Cheddar or mozzarella)
  • Shredded lettuce
  • Chopped tomatoes
  • Sour cream or Greek yogurt
  • Salt, pepper, cumin, chili powder (for seasoning)
  • Optional toppings (salsa, guacamole, sliced olives)

Instructions

  1. In a skillet over medium heat, brown the ground meat and drain excess fat. Season with salt, pepper, cumin, and chili powder. Stir well and set aside.
  2. Lay a small tortilla flat on a cutting board.
  3. Add a spoonful of the seasoned meat at the center of the tortilla, followed by a layer of shredded cheese, lettuce, tomatoes, and a dollop of sour cream or Greek yogurt.
  4. Carefully fold the edges of the tortilla towards the center, creating a little pocket.
  5. Heat a little olive oil in a non-stick skillet over medium-high heat. Place the folded side down and cook until golden brown, about 2-3 minutes. Flip and cook the other side. Repeat for the remaining tortillas.
  6. Once cooked, let them cool for a minute before slicing into quarters to serve.

Notes

These wraps can be made ahead of time and stored in the fridge for up to 3 days. They can also be frozen for up to a month.
