Description

Ingredients

  • 10 cloves fresh garlic, roughly chopped
  • 1 medium yellow onion, finely diced
  • 3 tbsp unsalted butter
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tsp fresh thyme leaves
  • Baguette slices for serving

Instructions

  1. Peel and chop the garlic cloves and finely dice the onion.
  2. In a large pot over medium heat, melt the butter until foamy.
  3. Add the onions and garlic; sauté for about 5 minutes until softened.
  4. Pour in the broth and bring to a gentle simmer.
  5. Cook for 15 minutes to allow flavors to meld.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in the heavy cream and thyme; season with salt and pepper to taste.
