- 3–4 boneless skinless chicken breasts
- 4 strips thick-cut bacon
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, diced
- 2 hard-boiled eggs, sliced
- 1/2 cup blue cheese crumbles
- Balsamic vinaigrette dressing
Instructions
- Preheat your oven to 375°F (190°C).
- Season chicken breasts with salt and pepper, place on a baking sheet and bake for 25-30 minutes until cooked through.
- Cook bacon in a skillet over medium heat until crispy, drain on paper towels and chop.
- Chop romaine lettuce, halve cherry tomatoes, dice avocado, and slice hard-boiled eggs.
- Assemble the salad by layering lettuce, chicken, tomatoes, avocado, bacon, blue cheese, and eggs in a bowl.
- Drizzle balsamic vinaigrette over the salad just before serving.
