Description

Ingredients

  • Large flour tortillas
  • Fresh eggs
  • Crispy bacon or sausage
  • Bell peppers (red, green, or yellow)
  • Shredded cheese (cheddar or Monterey Jack)

Instructions

  1. In a skillet over medium heat, cook your bacon until it’s crispy, or brown your sausage until it’s thoroughly cooked.
  2. Add diced bell peppers to the same skillet and sauté until softened.
  3. In a bowl, whisk eggs with salt and pepper. Pour into the skillet and scramble until fully cooked and fluffy.
  4. Lay a tortilla flat, add scrambled eggs, your choice of protein, sautéed peppers, and a sprinkle of cheese.
  5. Roll the tortilla tightly from the bottom up, tucking in the sides.
  6. Serve warm, optionally with salsa or avocado slices.

Notes
