Ingredients
- Large flour tortillas

- Crispy bacon or sausage

Instructions
- In a skillet over medium heat, cook your bacon until it’s crispy, or brown your sausage until it’s thoroughly cooked.
- Add diced bell peppers to the same skillet and sauté until softened.
- In a bowl, whisk eggs with salt and pepper. Pour into the skillet and scramble until fully cooked and fluffy.
- Lay a tortilla flat, add scrambled eggs, your choice of protein, sautéed peppers, and a sprinkle of cheese.
- Roll the tortilla tightly from the bottom up, tucking in the sides.
- Serve warm, optionally with salsa or avocado slices.
