- 4 boneless, skinless halal chicken breasts (or thighs)
- 1 ½ to 2 pounds baby potatoes, halved
- 1 cup low-sodium chicken broth
- 1 cup heavy cream (or a non-dairy substitute)
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Wash and halve the baby potatoes.
- Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
- Place the halved potatoes at the bottom of the crockpot.
- Lay the seasoned chicken on top of the potatoes.
- In a separate bowl, whisk together the chicken broth, heavy cream, minced garlic, and grated Parmesan cheese, then pour over the chicken and potatoes.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked and potatoes are fork-tender.
- Stir to combine, adjust seasoning if necessary, and garnish with fresh parsley before serving.
Notes
Searing the chicken before adding to the crockpot can enhance the flavor. Feel free to include vegetables like carrots or green beans for added nutrition.
