Description

Festive buttery shortbread cookies filled with sweet maraschino cherries, perfect for holiday gatherings.


Ingredients

  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 cup maraschino cherries, finely chopped (drained)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until fluffy.
  3. Gradually mix in the flour and salt until just combined.
  4. Fold in the chopped maraschino cherries and vanilla extract gently.
  5. Roll the dough into 1-inch balls and place them on ungreased baking sheets.
  6. Chill for 30 minutes.
  7. Bake for 12-15 minutes or until edges are golden brown.
  8. Allow cooling on baking sheets for 5 minutes before transferring to wire racks.

Notes

For a lighter version, consider using low-sugar granulated sugar, coconut oil, or whole wheat flour.
