- 2 medium zucchinis, sliced into rounds
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 2 tbsp extra virgin olive oil
- 1 tsp Italian seasoning
- 1/2 cup panko breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss zucchini and cherry tomatoes with olive oil, Italian seasoning, salt, and pepper until evenly coated.
- Add shredded mozzarella cheese to the vegetable mixture; stir gently to combine.
- In another bowl, mix panko breadcrumbs with a drizzle of olive oil until crumbly.
- Spread the cheesy vegetable mixture on a parchment-lined baking sheet and top with panko breadcrumbs.
- Bake for 20-25 minutes or until golden brown and bubbly.
- Allow to cool slightly before serving warm.
