Description

  • 1 lb lean ground beef
  • 1 medium sweet onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz provolone cheese, shredded
  • 1 cup heavy cream
  • 1 cup low-sodium beef broth
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Heat a large skillet over medium heat and add 2 tablespoons of olive oil.
  2. Add the diced sweet onions and green bell peppers, sautéing until softened (about 5 minutes).
  3. Add the lean ground beef, cooking until browned (about 7-10 minutes).
  4. Stir in the minced garlic, cooking for an additional minute.
  5. Pour in the heavy cream and beef broth, stirring well. Sprinkle in the Italian seasoning and simmer for about 5 minutes until slightly thickened.
  6. Fold in the shredded provolone cheese until melted and smooth.
  7. Cook the cheese tortellini according to package directions, drain, and mix into the sauce until coated.
