Description

  • 3 pounds chuck roast
  • 4 dried guajillo peppers
  • 2 teaspoons cumin seeds
  • 1 medium onion, chopped
  • 4 garlic cloves, crushed
  • 6 cups beef broth
  • 12 small corn tortillas
  • Fresh cilantro for garnish
  • Diced onion for garnish

Instructions

  1. Remove the stems and seeds from the guajillo peppers and toast them in a dry skillet over medium heat for 2 minutes.
  2. Blend the toasted peppers with cumin seeds, chopped onion, garlic, and 1 cup of beef broth until smooth.
  3. In a large pot over medium-high heat, brown the chuck roast on all sides.
  4. Pour the pepper marinade over the seared meat, add the remaining beef broth, cover, and simmer on low for about 180 minutes.
  5. Shred the beef and mix it back into the sauce.
  6. Warm the tortillas and fill them with the beef mixture, topping with cilantro and diced onion.
