Description

A comforting dish featuring creamy feta cheese and crispy Yukon Gold potatoes, perfect for family gatherings.


Ingredients

  • 2 lbs Yukon Gold potatoes
  • 8 oz high-quality feta cheese
  • 3 tbsp olive oil
  • 4 garlic cloves, thinly sliced
  • 2 tbsp fresh rosemary or thyme, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato pieces with olive oil, salt, and pepper until evenly coated.
  3. Add sliced garlic and chopped herbs to the potatoes, mixing well.
  4. Spread the seasoned potatoes on a parchment-lined baking sheet and sprinkle crumbled feta on top.
