- 1 pound catfish fillets, cut into bite-sized nuggets
- 1 cup all-purpose flour
- 1 cup cornmeal
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 large eggs
- 1 tablespoon milk or water
- Cooking spray or olive oil spray
Instructions
- Prepare the Catfish: Rinse and dry the catfish fillets, then cut into nugget-sized pieces.
- Set Up the Breading Station: Combine the flour with half the spices in one bowl, whisk eggs and milk in another, and mix cornmeal with remaining spices in a third bowl.
- Bread the Catfish Nuggets: Dredge each piece in flour, dip in egg mixture, then coat in cornmeal. Repeat for all nuggets.
- Preheat the Air Fryer: Preheat to 400°F (200°C) for about 5 minutes.
- Air Fry the Nuggets: Spray the air fryer basket, lay nuggets without overcrowding, spray lightly with oil, and cook for 8-10 minutes, flipping halfway.
- Serve: Let cool slightly before serving with your favorite dipping sauces.
Notes
Avoid overcrowding the air fryer basket for crispy texture. Use parchment paper if the basket tends to stick.
