Description

A vibrant and flavorful bowl combining juicy grilled chicken, sweet corn, and zesty lime over a bed of rice, sure to please the whole family.


Ingredients

  • 34 boneless skinless chicken breasts
  • 2 ears fresh sweet corn (or 1 cup frozen)
  • 2 cups cooked white or brown rice
  • Juice of 1 lime
  • ½ cup crema or sour cream
  • Fresh cilantro, chopped

Instructions

  1. Start by cooking the rice according to the package instructions.
  2. Preheat your grill or stovetop grill pan over medium-high heat.
  3. Season the chicken breasts with salt, pepper, and lime juice.
  4. Grill the chicken for 6-7 minutes on each side until cooked to 165°F.
  5. Grill the corn beside the chicken until lightly charred or sauté frozen corn until heated.
  6. Slice the chicken and Assemble the bowls with rice at the bottom, followed by the chicken and grilled corn.
  7. Drizzle with crema or sour cream, sprinkle cilantro, and add a squeeze of lime before serving.
