- 1 cup medium-ground cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 2 large eggs
- 1 cup corn kernels (fresh or frozen)
- 1 cup grated sharp cheddar cheese
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions, lightly greasing it with nonstick spray or butter.
- In a large bowl, whisk together the cornmeal, flour, baking powder, and salt until well combined.
- In another bowl, whisk the milk and eggs together until smooth.
- Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Fold in the corn kernels and grated cheese using a spatula.
- Pour about 1 cup of batter onto the preheated waffle iron and cook until golden brown and crispy, approximately 5 minutes.
- Serve warm and enjoy!
