Description

A deliciously comforting waffle made with cornmeal and cheddar, perfect for breakfast or as a side dish.


Ingredients

  • 1 cup medium-ground cornmeal
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 2 large eggs
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup grated sharp cheddar cheese

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions, lightly greasing it with nonstick spray or butter.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, and salt until well combined.
  3. In another bowl, whisk the milk and eggs together until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in the corn kernels and grated cheese using a spatula.
  6. Pour about 1 cup of batter onto the preheated waffle iron and cook until golden brown and crispy, approximately 5 minutes.
