Description

Delightful Raspberry Cream Cheese Pastry Bites combining rich cream cheese, sweet-tart raspberries, and flaky puff pastry.


Ingredients

  • 1 package (17.3 oz) frozen puff pastry sheets (2 sheets)
  • 8 oz cream cheese, softened
  • 1 cup fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Thaw the puff pastry sheets according to the package instructions.
  3. In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract, mixing until smooth.
  4. Gently fold in the fresh raspberries.
  5. Roll out the pastry sheets on a floured surface and cut into 3×3 inch squares.
  6. Place a spoonful of the raspberry mixture in the center of each square.
  7. Fold over one corner of each square to form triangles and seal the edges with a fork.
  8. Arrange the triangles on a lined baking sheet and brush tops with egg wash.
  9. Bake for 15-20 minutes until puffed and golden.
  10. Dust with powdered sugar before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat at 350°F (175°C) for 10 minutes.
