- 2 lbs halal beef stew meat, cut into 1-inch cubes
- 3 tablespoons halal vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth (ensure halal certification)
- 3 carrots, sliced
- 2 potatoes, diced
- 2 celery stalks, chopped
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Select and prepare your beef by cutting it into 1-inch cubes and patting it dry.
- Sear the beef in a large pot with heated vegetable oil until browned on all sides, then set aside.
- Sauté the diced onion in the same pot until translucent, then add minced garlic and cook briefly.
- Add sliced carrots, diced potatoes, and chopped celery, mixing well with the onions and garlic.
- Return the seared beef to the pot and stir in tomato paste and beef broth.
- Season with thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove the bay leaf, adjust seasoning if needed, and garnish with fresh parsley before serving.
Notes
For a rich flavor, sear the beef well and let the stew simmer long enough for the flavors to meld.
