Description

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 1/2 cup Marsala wine
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper and add them to the skillet.
  2. Sear the chicken for about 5-7 minutes on each side, until golden brown and aromatic.
  3. Add minced garlic to the skillet and stir constantly. Pour in the Marsala wine and let it simmer, reducing by half.
  4. Stir in the orzo pasta and chicken broth. Bring to a gentle boil, cover, and cook for about 10 minutes.
  5. Fold in fresh spinach and sprinkle grated Parmesan cheese on top. Stir until cheese melts and combines.
  6. Adjust seasoning to taste and serve warm, with extra Parmesan if desired.
