- 1 cup orzo pasta
- 1/2 cup Marsala wine
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper and add them to the skillet.
- Sear the chicken for about 5-7 minutes on each side, until golden brown and aromatic.
- Add minced garlic to the skillet and stir constantly. Pour in the Marsala wine and let it simmer, reducing by half.
- Stir in the orzo pasta and chicken broth. Bring to a gentle boil, cover, and cook for about 10 minutes.
- Fold in fresh spinach and sprinkle grated Parmesan cheese on top. Stir until cheese melts and combines.
- Adjust seasoning to taste and serve warm, with extra Parmesan if desired.
