Description

Ingredients

  • 1 lb ground beef or pork
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup fresh spinach or kale, chopped
  • 1 medium carrot, diced
  • 1 small onion, diced
  • 6 cups chicken broth
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large mixing bowl, combine the ground meat, breadcrumbs, the egg, minced garlic, chopped parsley, salt, and pepper. Mix until just blended—don’t overwork the mixture. Form it into small, bite-sized balls.
  2. Heat a drizzle of olive oil in a large pot over medium heat. Add the diced onions and carrots, stirring occasionally, until they soften and turn golden, roughly 5 minutes.
  3. Pour in the chicken broth gently, bringing it to a gentle boil.
  4. Carefully add your prepared meatballs into the broth. Let them simmer for about 15 minutes until fully cooked.
  5. Stir in the chopped spinach or kale, allowing them to wilt for approximately 2 minutes.
  6. Remove the pot from heat and stir in the grated Parmesan cheese, letting it melt into the broth before serving.

Notes

For lighter options, consider using ground turkey or chicken, whole-wheat breadcrumbs, and low-sodium broth. Freeze portions for future meals.
