- 2 lbs boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup crushed dill pickles
- 1 cup grated parmesan cheese
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- Fresh dill, for garnish (optional)
Instructions
- Begin by marinating the chicken breasts in dill pickle juice for at least 30 minutes.
- In separate bowls, combine crushed dill pickles, grated parmesan cheese, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Remove the marinated chicken from the pickle juice, shaking off excess brine. Dip each piece into the breadcrumb mixture, pressing gently for an even coating.
- Place the coated chicken on the prepared baking sheet and bake for 25-30 minutes, until cooked through and golden brown.
- Let the chicken rest for a few minutes before serving, garnished with fresh dill if desired.
