Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup crushed dill pickles
  • 1 cup grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh dill, for garnish (optional)

Instructions

  1. Begin by marinating the chicken breasts in dill pickle juice for at least 30 minutes.
  2. In separate bowls, combine crushed dill pickles, grated parmesan cheese, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Remove the marinated chicken from the pickle juice, shaking off excess brine. Dip each piece into the breadcrumb mixture, pressing gently for an even coating.
  5. Place the coated chicken on the prepared baking sheet and bake for 25-30 minutes, until cooked through and golden brown.
  6. Let the chicken rest for a few minutes before serving, garnished with fresh dill if desired.
