A flavorful and healthy Indian dish that combines spinach and paneer with aromatic spices, creating a creamy and comforting meal.

- 500 grams Fresh Spinach, washed and chopped
- 250 grams Paneer, cubed
- 1 medium Onion, finely chopped
- 1-inch piece Ginger, minced
- 3–4 cloves Garlic, minced
- 1–2 Green Chilies, sliced (optional)
- 1 teaspoon Cumin Seeds
- 1 teaspoon Ground Coriander
- 1 teaspoon Garam Masala
- ½ teaspoon Turmeric Powder
- ¼ cup Heavy Cream or Yogurt (optional)
- 2 tablespoons Oil or Ghee
- Salt, to taste
- Lemon Juice, from 1 lemon
Instructions
- Bring a large pot of water to a boil. Add the chopped spinach and blanch it for 2-3 minutes until it wilts. Drain and plunge into ice water.
- Once cooled, blend the spinach into a smooth paste and set aside.
- In a non-stick pan, heat oil or ghee over medium heat. Add cubed paneer and sauté until golden brown on all sides. Remove and set aside.
- In the same pan, add more oil if needed, and toss in cumin seeds. Once they crackle, add chopped onions and sauté until translucent.
- Stir in minced ginger, garlic, and green chilies (if using) and cook for another 2 minutes.
- Add turmeric, ground coriander, and salt, stirring well to combine. Add blended spinach and simmer for 5-7 minutes.
- Add the sautéed paneer and mix gently. Stir in cream or yogurt if using, sprinkle garam masala, and finish with lemon juice. Adjust seasoning as necessary.
Notes
Use fresh spinach for the best flavor. Make your own paneer for improved texture. Adjust spice levels to taste.
