Description

Delightful mini cornbread muffins infused with honey and buttery goodness, perfect for snacking or as a side dish.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • Additional melted butter for brushing, optional

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a mini muffin tin with cooking spray or additional melted butter.
  3. In a large bowl, combine cornmeal, all-purpose flour, baking powder, salt, and granulated sugar. Whisk together until well blended.
  4. In a separate bowl, whisk together milk, eggs, melted butter, and honey until thoroughly combined.
  5. Pour the wet ingredients into the bowl of dry ingredients and stir gently until just combined.
  6. Fill each muffin cup about 2/3 of the way full with the batter.
  7. Bake for 10-12 minutes or until the tops are golden and a toothpick inserted comes out clean.
  8. Let the poppers cool for a few minutes before transferring to a wire rack. Brush the tops lightly with melted butter if desired.

Notes

Don’t overmix to avoid dense poppers. You can substitute honey with maple syrup for a different flavor.
