Delightful mini cornbread muffins infused with honey and buttery goodness, perfect for snacking or as a side dish.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1/4 cup honey
- Additional melted butter for brushing, optional
Instructions
- Preheat your oven to 400°F (200°C).
- Grease a mini muffin tin with cooking spray or additional melted butter.
- In a large bowl, combine cornmeal, all-purpose flour, baking powder, salt, and granulated sugar. Whisk together until well blended.
- In a separate bowl, whisk together milk, eggs, melted butter, and honey until thoroughly combined.
- Pour the wet ingredients into the bowl of dry ingredients and stir gently until just combined.
- Fill each muffin cup about 2/3 of the way full with the batter.
- Bake for 10-12 minutes or until the tops are golden and a toothpick inserted comes out clean.
- Let the poppers cool for a few minutes before transferring to a wire rack. Brush the tops lightly with melted butter if desired.
Notes
Don’t overmix to avoid dense poppers. You can substitute honey with maple syrup for a different flavor.
