- 4 large potatoes (Yukon Gold or Russet)
- 1 large onion, chopped
- 5 cloves of garlic, minced
- 4 cups vegetable broth (or chicken broth)
- 1 cup heavy cream or coconut cream
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Fresh herbs for garnish (parsley or chives, optional)
Instructions
- Begin by peeling and dicing the potatoes into small cubes. Chop the onion and mince the garlic.
- In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the cubed potatoes to the pot along with the vegetable or chicken broth. Bring this mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are cooked, use an immersion blender to puree the soup until smooth, or transfer it to a regular blender in batches.
- Return the blended soup to the pot, and stir in the heavy cream or coconut cream. Heat it gently while mixing well and season with salt and pepper.
- Ladle the soup into bowls and garnish with fresh herbs if desired. Enjoy!
