Description

Ingredients

  • 4 large potatoes (Yukon Gold or Russet)
  • 1 large onion, chopped
  • 5 cloves of garlic, minced
  • 4 cups vegetable broth (or chicken broth)
  • 1 cup heavy cream or coconut cream
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley or chives, optional)

Instructions

  1. Begin by peeling and dicing the potatoes into small cubes. Chop the onion and mince the garlic.
  2. In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the cubed potatoes to the pot along with the vegetable or chicken broth. Bring this mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  4. Once the potatoes are cooked, use an immersion blender to puree the soup until smooth, or transfer it to a regular blender in batches.
  5. Return the blended soup to the pot, and stir in the heavy cream or coconut cream. Heat it gently while mixing well and season with salt and pepper.
  6. Ladle the soup into bowls and garnish with fresh herbs if desired. Enjoy!
