A hearty and delicious one-pan meal featuring tender chicken breasts and creamy baby potatoes, coated in a flavorful garlic parmesan mixture.

- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup grated parmesan cheese
- 3 tablespoons olive oil
- 1 lb baby potatoes, halved
- Salt and pepper to taste
- 1 tablespoon dried Italian herbs (oregano, thyme, basil)
Instructions
- Preheat your oven to 400°F (200°C).
- Spray a baking dish with nonstick spray.
- In a mixing bowl, combine olive oil, minced garlic, dried Italian herbs, salt, and pepper.
- Coat each chicken breast with the olive oil mixture.
- Toss halved baby potatoes with a drizzle of olive oil, salt, pepper, and half of the grated parmesan.
- Lay the seasoned chicken breasts in the baking dish and arrange the potatoes around them. Drizzle remaining oil mixture over everything.
- Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are tender.
- Before serving, sprinkle the remaining parmesan cheese over the dish.
Notes
For a lighter version, use low-fat cheese or dairy-free options. Adjust cooking times for different types of potatoes or bone-in chicken.
