Description

A hearty and delicious one-pan meal featuring tender chicken breasts and creamy baby potatoes, coated in a flavorful garlic parmesan mixture.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup grated parmesan cheese
  • 3 tablespoons olive oil
  • 1 lb baby potatoes, halved
  • Salt and pepper to taste
  • 1 tablespoon dried Italian herbs (oregano, thyme, basil)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a baking dish with nonstick spray.
  3. In a mixing bowl, combine olive oil, minced garlic, dried Italian herbs, salt, and pepper.
  4. Coat each chicken breast with the olive oil mixture.
  5. Toss halved baby potatoes with a drizzle of olive oil, salt, pepper, and half of the grated parmesan.
  6. Lay the seasoned chicken breasts in the baking dish and arrange the potatoes around them. Drizzle remaining oil mixture over everything.
  7. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are tender.
  8. Before serving, sprinkle the remaining parmesan cheese over the dish.

Notes

For a lighter version, use low-fat cheese or dairy-free options. Adjust cooking times for different types of potatoes or bone-in chicken.
