Description

A heartwarming one-pan meal featuring juicy chicken breasts and tender baby potatoes, all infused with aromatic garlic and rich parmesan cheese.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup grated parmesan cheese
  • 3 tablespoons olive oil
  • 1 lb baby potatoes, halved
  • Salt and pepper to taste
  • 1 tablespoon dried Italian herbs (oregano, thyme, basil)

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, combine the olive oil, minced garlic, dried Italian herbs, salt, and pepper.
  3. Coat each chicken breast in the garlic and herb mixture.
  4. Toss the halved baby potatoes with olive oil, salt, pepper, and half of the grated parmesan.
  5. Place the seasoned chicken in the prepared baking dish and arrange the potatoes around it.
  6. Drizzle any remaining oil mixture over everything.
  7. Bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender and golden.
  8. Sprinkle the remaining parmesan over the dish before serving.

Notes

For a healthier version, use skinless chicken thighs or turkey, reduce the cheese, or substitute sweet potatoes for the baby potatoes.
