A heartwarming one-pan meal featuring juicy chicken breasts and tender baby potatoes, all infused with aromatic garlic and rich parmesan cheese.

- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup grated parmesan cheese
- 3 tablespoons olive oil
- 1 lb baby potatoes, halved
- Salt and pepper to taste
- 1 tablespoon dried Italian herbs (oregano, thyme, basil)
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In a bowl, combine the olive oil, minced garlic, dried Italian herbs, salt, and pepper.
- Coat each chicken breast in the garlic and herb mixture.
- Toss the halved baby potatoes with olive oil, salt, pepper, and half of the grated parmesan.
- Place the seasoned chicken in the prepared baking dish and arrange the potatoes around it.
- Drizzle any remaining oil mixture over everything.
- Bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender and golden.
- Sprinkle the remaining parmesan over the dish before serving.
Notes
For a healthier version, use skinless chicken thighs or turkey, reduce the cheese, or substitute sweet potatoes for the baby potatoes.
