- 4 medium bell peppers
- 1 pound lean ground turkey
- 1 cup cooked rice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheese
- Salt, pepper, and oregano to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the bell peppers by cutting off the tops and removing the seeds.
- Sauté the onions in a skillet over medium heat until translucent.
- Add minced garlic and ground turkey; cook until browned.
- Stir in cooked rice, diced tomatoes, salt, pepper, and oregano until well mixed.
- Fill each bell pepper with the turkey mixture and top with cheese.
- Place peppers in a baking dish, cover with foil, and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes until cheese is melted and bubbly.
Notes
Can substitute rice with quinoa or cauliflower rice for a low-carb option. Consider experimenting with different spices for added flavor.
