A family favorite, these delicious stuffed bell peppers with turkey are packed with flavor and easy to prepare, perfect for busy weeknights.

- 4 medium bell peppers (red, yellow, or green)
- 1 pound lean ground turkey
- 1 cup cooked rice (brown rice optional)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheese (mozzarella or cheddar)
- Salt, pepper, and oregano to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the bell peppers: Cut off the tops and remove the seeds.
- In a skillet over medium heat, sauté chopped onions until translucent. Add minced garlic and ground turkey; cook until browned.
- Stir in cooked rice, diced tomatoes, salt, pepper, and oregano; mix well.
- Fill each pepper with the turkey mixture and top with cheese.
- Place the filled peppers in a baking dish, cover with foil, and bake for 25 minutes. Remove foil for the last 5 minutes to brown the cheese.
Notes
Store leftovers in the refrigerator for up to three days or freeze unbaked peppers for convenience.
