Description

A family favorite, these delicious stuffed bell peppers with turkey are packed with flavor and easy to prepare, perfect for busy weeknights.


Ingredients

  • 4 medium bell peppers (red, yellow, or green)
  • 1 pound lean ground turkey
  • 1 cup cooked rice (brown rice optional)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt, pepper, and oregano to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers: Cut off the tops and remove the seeds.
  3. In a skillet over medium heat, sauté chopped onions until translucent. Add minced garlic and ground turkey; cook until browned.
  4. Stir in cooked rice, diced tomatoes, salt, pepper, and oregano; mix well.
  5. Fill each pepper with the turkey mixture and top with cheese.
  6. Place the filled peppers in a baking dish, cover with foil, and bake for 25 minutes. Remove foil for the last 5 minutes to brown the cheese.

Notes

Store leftovers in the refrigerator for up to three days or freeze unbaked peppers for convenience.
