Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the granulated sugar, brown sugar, and softened butter until light and fluffy.
- Add the large egg and apple butter into the mixture, mixing until well combined.
- In a separate bowl, whisk together the flour, cinnamon, and baking soda.
- Gradually incorporate the dry mixture into the wet ingredients until just combined.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about two inches of space between each mound.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Cool the cookies on the baking sheets for five minutes before transferring them to wire racks to cool completely.
