- 4 medium sweet potatoes
- 2 cups fresh spinach
- 1 cup cremini mushrooms, sliced
- 3 cloves garlic, minced
- 4 oz cream cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and bake for about 45 minutes until tender.
- Heat the olive oil in a skillet, add garlic and mushrooms, and sauté for about 5 minutes.
- Add the spinach and cook until wilted.
- Reduce heat, mix in cream cheese, and season.
- Once sweet potatoes are done, slice them open and scoop out some flesh.
- Mix the potato flesh with the vegetable filling, stuff back into the skins, top with mozzarella, and bake for another 15 minutes until cheese is bubbly.
Notes
For a healthier alternative, consider using low-fat cream cheese or a dairy-free option. You can also add other vegetables like bell peppers for extra nutrition.
