Description

A comforting dish of baked sweet potatoes filled with sautéed mushrooms, fresh spinach, cream cheese, and mozzarella, perfect for any occasion.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups fresh spinach
  • 1 cup cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for about 45 minutes until tender.
  3. Heat the olive oil in a skillet, add garlic and mushrooms, and sauté for about 5 minutes.
  4. Add the spinach and cook until wilted.
  5. Reduce heat, mix in cream cheese, and season.
  6. Once sweet potatoes are done, slice them open and scoop out some flesh.
  7. Mix the potato flesh with the vegetable filling, stuff back into the skins, top with mozzarella, and bake for another 15 minutes until cheese is bubbly.

Notes

For a healthier alternative, consider using low-fat cream cheese or a dairy-free option. You can also add other vegetables like bell peppers for extra nutrition.
