Description

A creamy and comforting Chicken and Spinach Casserole with Cream Cheese, perfect for family dinners or meal prep.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, roughly chopped
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1 cup cooked pasta or rice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, chopped spinach, softened cream cheese, sour cream, and one cup of shredded cheese. Mix until well combined.
  3. Sprinkle in the garlic powder, onion powder, salt, and pepper. Stir to evenly disperse.
  4. If desired, pour in half a cup of chicken broth and mix until the consistency is creamy.
  5. Transfer the chicken mixture into a greased baking dish. If using, layer in cooked pasta or rice.
  6. Sprinkle the remaining cheese over the top.
  7. Bake for 25-30 minutes until the cheese is melted and golden brown.
  8. Allow to cool for a few minutes before serving.

Notes

For a creamy texture, ensure cream cheese is softened prior to mixing. Fresh spinach is preferred, but frozen can be used if drained well.
