Delightful puff pastry filled with sweet, buttery caramelized onions and creamy cheese, perfect as an appetizer or snack.

- 1 sheet of puff pastry (thawed)
- 2 large yellow onions (sliced)
- 4 tbsp unsalted butter
- 1 tsp fresh thyme leaves
- 4 oz goat cheese or cream cheese (crumbled)
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry and cut into 4-inch squares.
- Place squares on a parchment-lined baking sheet.
- In a skillet, melt the butter over medium heat.
- Add sliced onions, cooking until golden brown and soft, about 25 minutes.
- Stir in thyme and balsamic vinegar in the last 5 minutes of cooking.
- Season with salt and pepper.
- Spoon the caramelized onion mixture onto each pastry square and top with crumbled cheese.
- Bake for 15-20 minutes until the pastry is golden brown.
Notes
These tartlets can be prepared ahead of time. Freeze leftovers in airtight containers for up to 2-3 months.
