Description

Delicious Beef Birria Tacos with slow-cooked beef and authentic flavors, perfect for any occasion.


Ingredients

  • 3 pounds chuck roast
  • 4 dried guajillo peppers
  • 2 teaspoons cumin seeds
  • 1 medium onion, chopped
  • 4 garlic cloves, crushed
  • 6 cups beef broth
  • 12 small corn tortillas
  • Fresh cilantro and diced onion for garnish

Instructions

  1. Prepare the Peppers: Remove stems and seeds from guajillo peppers, toast them in a dry skillet over medium heat for about two minutes.
  2. Blend the Marinade: Add toasted peppers, cumin seeds, chopped onion, crushed garlic, and one cup of beef broth to a blender. Blend until smooth.
  3. Brown the Chuck Roast: In a large pot over medium-high heat, brown the chuck roast on all sides.
  4. Combine and Simmer: Pour the pepper marinade over the browned meat, add remaining beef broth, cover and simmer on low for about three hours.
  5. Shred and Mix: Shred the cooked beef with two forks and mix it back into the sauce.
  6. Prepare the Tortillas: Warm tortillas in a skillet over medium heat until pliable.
  7. Assemble the Tacos: Fill each tortilla with shredded beef and top with fresh cilantro and diced onions.

Notes

Avoid overcooking the beef to prevent a mushy texture. Always warm the tortillas before assembly.
