- 3 pounds chuck roast
- 4 dried guajillo peppers
- 2 teaspoons cumin seeds
- 1 medium onion, chopped
- 4 garlic cloves, crushed
- 6 cups beef broth
- 12 small corn tortillas
- Fresh cilantro and diced onion for garnish
Instructions
- Prepare the Peppers: Remove stems and seeds from guajillo peppers, toast them in a dry skillet over medium heat for about two minutes.
- Blend the Marinade: Add toasted peppers, cumin seeds, chopped onion, crushed garlic, and one cup of beef broth to a blender. Blend until smooth.
- Brown the Chuck Roast: In a large pot over medium-high heat, brown the chuck roast on all sides.
- Combine and Simmer: Pour the pepper marinade over the browned meat, add remaining beef broth, cover and simmer on low for about three hours.
- Shred and Mix: Shred the cooked beef with two forks and mix it back into the sauce.
- Prepare the Tortillas: Warm tortillas in a skillet over medium heat until pliable.
- Assemble the Tacos: Fill each tortilla with shredded beef and top with fresh cilantro and diced onions.
Notes
Avoid overcooking the beef to prevent a mushy texture. Always warm the tortillas before assembly.
