- For the Banana Bread:
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon vanilla extract
- 1 cup sugar
- 1 large egg
- 1 ½ cups all-purpose flour
- 1 teaspoon ground cinnamon (optional)
- For the French Toast:
- 3 slices of homemade banana bread (1-inch thick)
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- For the Bananas Foster Topping:
- 2 ripe bananas, sliced
- 1/4 cup brown sugar
- 2 tablespoons butter
- 1/4 cup dark rum (optional)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the melted butter and mashed bananas. Add baking soda and salt, mixing well.
- Stir in vanilla extract and sugar until well combined. Beat in the egg, ensuring everything is well mixed.
- Gently fold in the flour and cinnamon until just combined. Pour the batter into a greased loaf pan and bake for 60-65 minutes until golden brown. Allow to cool before slicing into 1-inch thick pieces.
- In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla extract. Dip each slice of banana bread into the egg mixture, ensuring both sides are coated.
- Melt a tablespoon of butter in a skillet over medium heat. Cook the soaked banana bread slices for about 2-3 minutes on each side until golden brown and crispy.
- In a separate pan, melt the butter over medium heat and add brown sugar, stirring until bubbling. Add the sliced bananas and cook until coated in the caramel mixture. If using dark rum, carefully add it and let simmer.
- Serve the French toast topped with the Bananas Foster mixture and any leftover caramel sauce.
Notes
Use overripe bananas for the best flavor. Don’t rush the cooking process for perfectly golden French toast.
